At Alchemy Juice Company, we sell small batches of fresh, raw, unpasteurised juices that are packed with big flavour and essential nutrients. We find it’s all you need to make this city your own.

Most nutritionist agree that a range 50-100 Grams of net carbohydrates per day can be considered low-carb. In its simplest format: net carbs are the total carbs, minus the fibre. But sometimes there are issues around the term "net carbs" as some nutritionists feel that this term is hijacked by food manufacturers to make their products appear more "low carb" than they actually are.

As you can see, we have given you the total carbs and you can work out the net carbs, by subtracting the fibre. This shows you that the lunch boxes fit into "low carb" category nicely. For those looking to go especially low carb, here are some guidelines from Dr Andreas Eenfeldt MD, who runs the site: dietdoctor.com:

  • Strict LCHF  <20 gram carbs per day
  • Moderate LCHF  20-50 grams per day
  • Liberal LCHF  50-100 grams per day

A word on calories: some lunch boxes are pretty high in calories. And this is because they contain quite a lot of good fats – yes Paleo caesar, we're talking about you! But not all calories are created equal. Think about it: an avocado versus a Mars bar. Similar in calories, but nutritionally they are miles apart. 

So whilst lots of nutritionists will tell you to ignore the number of calories and instead focus on where the calories are coming from (back to avocado versus Mars bar), in Alchemy, we think it's important you have more info, not less. 

Co-founder Domini Kemp sums it up nicely, "The way I eat nowadays is very different to how I ate even 5 years ago. Throughout my teens, twenties and thirties, I avoided fat at all costs, ate a high carb diet and avoided red meat. I counted calories and looking back, I now know this diet simply did not suit me, which is a real shame because I ADORE carbs! I am now well into my forties and since then, I've flipped my diet upside-down. I go for low carb foods, focus on eating good fats and not too much protein. I keep an eye on calories, but they are the last point of reference."

Our juices are cold pressed, raw and unpasteurised. Our juices are not made in centrifugal juicers that heat up and oxidize the juice, potentially destroying the goodness. They are bottled and pressed, six days a week. The flavours and combinations have been carefully selected by our nutritional experts. Our juices have body, no pulp and are pure. They are not subjected to HPP (High Pressure Pasteurization) and are not frozen.

If you have a weakened immune system, or are very old or very young, then you do need to take on board that this is a raw, unpasteurized product. However, our vegetables and fruit have been washed in raw cider vinegar. Our raw juices will leave you felling fully energised as the living nutrients in the juices deliver vitamins, minerals and live enzymes that cleanse, heal and nourish.  Our goal is to provide nourishing clean fuel for the mind, body, and spirit.

Warning: Very young children, the elderly, those with diabetes, candida and those recovering from illness should not follow a detox programme without professional supervision. However it is more than safe to juice regularly on a daily basis. 

Our smoothies are pretty fabulous. Or so we've been told. Some are easier going than others: the Booty Mint & Lemonade Crush is refreshing and zingy, perfect for a sunny day. The fruitier ones like the Slush Puppy or Berry Buddy are great ways to get some more fruit into you. The OMG is an unbelievable treat - really delicious as long as you like almond milk and butter. Some contain almond milk or coconut water plus a range of options that will appeal to those requiring no carbs and lots of good fats (Kale crush) or those who need some good fats in a palatable way - think about our Green Brute. We've got a liquid breakfast or lunch for everyone.

We've also given you the option of adding some bits and pieces to your smoothies, such as bee pollen, spirulina and chlorella, so you can customize your own smoothies.

Doris Choi

Doris Choi is beyond gorgeous. A health food chef, instructor, and menu consultant, specializing in raw and/or plant based foods. Oh and did we mention she's also co-author of the New York Times best seller,  The Fresh Energy Cookbook which is the essential companion guide to The Raw Food  Detox Diet by Natalia Rose. I'm extra lucky because Doris is also my sister in law which means I have spent 2 weeks every summer for the last 6 years cooking with her, learning from her and being a very grateful recipient of all her culinary and nutritional wisdom.  Doris' recipes emphasize living foods in digestible combinations, ideal for optimal cellular health, nutrition, energy, weight loss, and satisfaction. She has also helped us with our juice menus and smoothies. Her recent raw food & vegan dinner & demo in Alchemy this summer went down a storm. She also appeared on TV3 showing us how to crack a coconut and make raw sushi using jicama instead of rice.

Patricia Daly

I've been a huge fan of Patricia's since meeting her last year post my own cancer diagnosis and was struck by how thorough and deep her knowledge of nutrition is. It was a whole new world of information to start disseminating and brought the notion of healthy eating to a whole new level. Patricia Daly is a fully qualified Nutritional Therapist (BA Hons, dipNT, mBANT, mNTOI) and following her own cancer diagnosis (back in 2008 ) , she started studying nutrition and specialising in the area of Integrative Cancer Care. Patricia has worked with hundreds of cancer patients in Ireland and abroad and in January 2014, she published her first eBook “Practical Keto Meal Plans for Cancer.” She lectures at the lrish Institute of Nutrition and Health and is a regular contributor to magazines and newspapers on the benefits of good nutrition and in 2014, Patricia established an online business serving cancer patients, their carers and other healthcare professionals. Several of her recipes are on the Alchemy menu, including the Ketogenic porridge and the Keto-crush Smoothie, both perfect for those really keen to restrict their carbohydrate in-take and substitute it with plenty of good fats. Domini & Patricia are currently working on a book of recipes for integrative cancer care , including low carb and ketogenic cooking, which will be published in 2016. In the interim, we look forward to having her as one of our guest speakers in Alchemy this Spring. Susan Jane White

Susan is a nutritional whirlwind: hugely intelligent and well informed, with a deep understanding of the connection between the food we eat and our energy levels. I christened her my "food fairy" last year when I was going through Chemo and would see a text telling me to look outside on my doorstep. There I would find something beautifully wrapped and utterly delicious. Her kindness is only exceeded by her unbeatable knowledge and fantastic ability as a nutritional cook and talented writer, whose book, "Th Extra Virgin Kitchen" proudly sits on my shelves and is regularly consulted . Susan gets it. She really does  because she has been that soldier who has battled her own health issues and come out the far side, fighting for good food and personal change. We are delighted to have worked with her on the Alchemy menus and her legions of fans will recognise some of her signature dishes. We're delighted to be hosting several events and dinners with Susan in Alchemy this year as her word needs to be spread. Watch this space.
